Coconut Pie Crust
This amazing pie crust is wheat-free and incredibly easy to make. Coconut is one of the most nutritious foods you can eat, so it’s a win-win all around!
Ingredients:
1/3 cup melted coconut oil or butter
½ tsp. Celtic Sea Salt
1 ½ cups dried coconut
Dash of Amaranth or rice flour
Directions:
Mix coconut with butter in a small bowl. Transfer to a buttered and floured 9-inch pie pan and press firmly and evenly against the bottom and sides. Bake at 300 degrees for 30 minutes or until crust is a dark golden brown. Allow to cool to room temperature.
Fill with your favorite filling and enjoy!
