No-bake Pumpkin Pie (Raw)
This recipe is an amazing substitute for traditional pumpkin pie! It’s raw, gluten-free AND dairy free!
Ingredients:
4 cups chopped raw pumpkin
1 tbsp pumpkin-pie spice
1 tsp cinnamon
3 tbsp psyllium husk
1 tbsp vanilla extract or 4 vanilla beans
4 tbsp cold-pressed extra-virgin olive oil
1 tsp sea salt
Directions:
Blend all ingredients in www.TheVitamixBlender.com (except psyllium husk) until creamy. Add psyllium husk. Blend until thick. Add filling to crust and leave 4 hours to set in freezer. Remove, and slice into pieces. Leftovers may be refrigerated for up to 3 days. Makes one 8-inch pie.
